ALES - These beers are produced with warm fermented yeast which rises to the top, thus the name top-fermented or ale. There are many styles of ales including: Bitter, Scottish, India Pale, Brown, Fruited, and Pale.
PORTER'S and STOUTS - Top fermenting yeast (ale yeast) is used to produce porters and stouts. These beers are darker in color, have a chocolate or coffee roasted flavor, and are generally fuller in body than the other ales.
LAGERS - Bottom-fermenting yeast is used to produce lagers. This yeast is more stable than ale yeast making lagers easier to mass produce. Most American mass produced beers are of the lager type. These beers are produced at colder temperatures and lagered or "laid down" for several days or months.
